In an official statement sent to ITP.net, an Adobe representative stated, "Adobe shipped Acrobat 8 in November of last when the final versions of Vista and Office 2007 were not yet available. As a result, while the initial shipping version of Acrobat 8 could be installed and run on Vista and Office 2007, it did not fully support them."
