A tofu fantasy at Shangri-La

Vegetarian specialities will top the menu at Shang Palace, the signature restaurant of the Shangri-La Hotel Dubai, this month as the restaurant introduces a set lunch menu inspired by tofu. The chefs at Shang Palace have created an array of tofu dishes, such as Shanghainese marinated deep-fried tofu; chilled tofu with dried shrimp; braised tofu soup; braised tofu with minced beef and chilli and, for dessert, fresh tofu with honey. “Promotions are important as they create interest, awareness and an angle to excite the diner with something new and fresh on a monthly basis. They also give our Chinese chefs the platform to share their more specialised talents,” Joe Zheng Jun, restaurant manager, Shang Palace, Shangri-La Hotel, Dubai, told Caterer Middle East. “As the Chinese signature restaurant of Shangri-La, we continue to provide authentic Cantonese style cuisine in our à la carte, set menu and Dim Sum menu,” Jun added. Meanwhile, over at Shang Palace’s sister outlet, Hoi An, Vietnamese cuisine is heading up the menu, all with a French twist. Chef Phu from the Hoi An kitchen has blended traditional Vietnamese ingredients with modern French cooking methods to showcase the food of the Vietnamese people.
