UAE-based Masterbaker Marketing has announced that it is considering doubling its production capacity in response to an increased demand for bakery ingredients for use in hotels and industrial bakeries. Masterbaker Marketing FZCO, an arm of the Switz Group, operates from Dubai’s Jebel Ali Free Zone, with marketing and distribution centres in Abu Dhabi, Oman, the Maldives and Qatar. The Masterbaker product line-up includes traditional bakery offerings. However, the company’s most surprising growth is in the relatively new sector of pasteurised eggs. The company recently inaugurated its egg processing plant, capable of producing more than 300 tonnes of liquefied pasteurised eggs per month. The new plant, with its fully automated technology, ensures complete purification by heating and cooling processes that obliterate all the pathogenic bacteria responsible for diseases like avian flu, cattle diseases and salmonella. According to Ronnie Khajotia, general manager of Masterbaker, the liquefied pasteurised eggs industry will continue to have huge market potential in the Middle East, particularly with the growing tourism and hospitality sectors. The hospitality industry, he remarks, accounts for almost 50% of the pasteurised eggs market. “The major five-star hotels and airlines are now committed to using only pasteurised eggs, because the issue of bacterial diseases is now more prevalent than ever,” Khajotia says. “We currently sell around three million eggs per month in markets like Kuwait, the Maldives, Bahrain, Qatar, Oman and Sri Lanka,” he adds. Annual regional sales for the pasteurised eggs are US $10.8 million.
